A winemaker's ingenious idea

This exceptional wine is the result of a unique experiment, combining the hand-picking of Jacquère grapes with the icy conditions of the European heights.

The bold idea came from Pascal Perceval, a passionate winegrower from Savoie, whose estate nestles in the heart of the French Alps. His vision? To give new life to a precious selection of his finest wines.

After a meticulous selection process, the grapes are pressed, then the juice is transported by helicopter to an impressive altitude of 3,613 meters. Up there, close to Europe's highest peaks, the liquid freezes for between 5 and 30 days. Under the effect of sub-zero temperatures, cryoextraction occurs naturally: the water separates from the must, leaving around 30% concentrated juice, ready for fermentation.

Back at Domaine Perceval, the juice is fermented under careful supervision to reach an alcohol content of 9%. Once the process is complete, the precious ice wine is bottled, and made available both in-store and to the public.
